Makes 6-8 mini low carb bread loafs, depending based on size.

3 eggs

100 grams (3.5 oz .) of cream cheese

a pinch of salt

½ tablespoon fiberhusk / psyllium seed husks (could be excluded)

½ teaspoon baking powder (could be excluded)

Separate the eggs, using the egg-whites in a single bowl and also the egg yolks in another.

Whip the egg-whites along with the salt until very stiff. You need to have the ability to turn the bowl over with no egg-whites moving.

Mix the egg yolks and also the cream cheese well. When you purchase, add some psyllium seed husk and baking powder (this will make the Oopsie more bread-like).

Lightly fold the egg-whites in to the egg yolk mix – keep the environment within the egg-whites.

Put 6 large or 8 more compact oopsies on the baking tray.

Bake in the center of the oven at 150° C (300° F) for around 25 minutes – until they turn golden.

Enjoy this during the atkins induction or any phase of the low carb diet and stay in ketosis. To nibble on Oopsies as low carb bread or rely on them like a bun for any hotdog or hamburger. You may also put different types of seed products in it before baking them, for example poppy, sesame or sunflower seed products. One large Oopsie can be used as a swiss roll: Give a generous layer of whipped cream plus some berries.
